Keto Mug Muffin

It's easy to stay in ketosis even while indulging in this delicious blueberry mug muffin!  Feel free to swap out the toppings with other keto and vegan friendly treats!

 

Ingredients:

2 TBS Keto Fast

1 TBS Coconut Flour

2 TBS Monk Fruit or sweetener of choice

½ tsp baking powder

Dash of cinnamon

1 Flax egg (2 tsp flaxmeal + ¼ C hot water)

1 TBS melted Coconut Oil

Blueberries for topping

Coconut whip for topping

 

Combine all of the ingredients (excluding coconut whip) in a microwave-safe mug and mix thoroughly.  Microwave for 1:15 then add coconut whip (or other toppings) and enjoy!
