These protein-enhanced pancakes pack a whooping 20 grams of protein per serving, but you’d never know it from their moist, fluffy texture and sweet, mild flavor!
Ingredients:
- 3/4 cup milk of choice
- 2 tablespoons apple cider vinegar
- 1/2 cup whole wheat pastry flour or all-purpose flour
- 1/4 cup oat flour (or additional wheat flour)
- 1/4 cup Oriya Organics Superfood Protein Medley
- 2 tablespoons granulated sweeter of choice
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 2 tablespoons melted coconut oil, plus more for the pan
- 2 tsps vanilla extract
- 1 egg or scant 1/4 cup applesauce, room temperature
Directions:
1. In a medium bowl, combine the milk and vinegar. Set aside for 10 minutes to allow the milk to curdle.
2. In a large bowl, whisk together the flours, Superfood Protein Medley, sugar, baking powder, baking soda, and salt.
3. Add the melted coconut oil, vanilla, and egg (or applesauce) to the curdled milk mixture. Beat lightly with a fork to combine.
4. Pour the wet mixture into the dry mixture and fold together gently with a spatula or wooden spoon until just combined. The batter will be lumpy and thick. Set the bowl of batter aside for 5 minutes.
5. Meanwhile, preheat a cast iron skillet (greased lightly with coconut oil) over medium-low heat. (Alternatively, cook on a nonstick griddle over medium heat).
6. When the skillet is hot, add a scoop of batter and spread it gently into a pancake shape. Let it cook for 3 to 4 minutes, then flip and cook for 2 to 3 more minutes on the other side. Transfer to a plate while you cook the remaining pancakes. Brush the skillet with 1/2 teaspoon coconut oil in between each pancake to re-grease the skillet.
7. When all pancakes are cooked, serve hot with butter, maple syrup, nut butter, fruit jam, sliced bananas, or your favorite toppings!
